The 2019 Aquilini Sauvignon Blanc expresses a sophisticated and elegant structure not always found in a Sauvignon Blanc. Born of the same climate and soil as our Cabernet Sauvignon, this wine offers structure and complexity yet freshness on the palate. From the first aromatic nose to its lingering finishing, this elegant wine offers much to savor.
100% Sauvignon Blanc from Red Mountain. Barrel fermented and aged for 6 months in 65% new French oak (including the 265-liter “cigar” barrels first designed for Didier Dagueneau’s renowned Silex Sauvignon Blanc).
2019 delivered ideal growing conditions in the Sauvignon Blanc vineyard. The perfectly ripened grapes were hand harvested early in the morning to preserve acidity and, following a meticulous selection of the best clusters, promptly pressed on the gentlest setting. The juice was then allowed to settle for 48 hours before transfer to barrel, where it then had a cool four week fermentation. Malolactic fermentation was avoided to preserve the wine’s freshness, intensity and fragrance. As a result, the wine is noticeably more textural and layered than most, showcasing the finesse of our winemaker. Very aromatically expressive and varietally pure.
Wonderfully clean and focused aromas open with stone fruits, citrus and tropical notes interlaced with Meyer lemon. Energetic acidity frames the core of this wine while building texture on the palate, deftly balanced by just a nuance of oak. The finish is clean and lingering with minerality throughout.
