Blessed with great soil, ideal climate, and refreshing breezes, our winemaker does very little to interfere with the natural fruit. The Blackwood Canyon and The Canyons vineyards we harvest for our Cabernet are nurtured by hand, blending old world artistry and new world science to reveal the character of a great Cabernet Sauvignon. 100% Cabernet Sauvignon from Red Mountain. Fermented in a combination of Taransaud oak fermenters & stainless-steel tanks, aged 27 months in 82% new French oak.
As we often do, especially given the diversity of the vineyard sources, we made several harvest passes for the 2017, resulting in several distinct fermentations. This “blending” of the lots produces our best results. Grapes were hand-picked on October 5th and again on October 13th. Once in the winery, the grapes were gently destemmed and lightly broken. Each lot received a 4-day cold soak before the grapes started conversion to wine. Maceration time on skins was 27-30 days followed by a gentle pressing and transfer to barrel where the wines slowly began Malolactic fermentation. “Selection” began almost immediately, as the barrels were assessed and chosen for their character and distinct profile. The barrels which eventually made up the Cabernet Sauvignon and Family Blend come into focus as the wines age over 27 months, all in French oak.
Designed with the capacity to age, our Cabernet Sauvignon offers impressively big, ripe tannins and a deep core of intense, dark fruit interwoven with iron, bay leaf and crushed rock. The palate is opulent and concentrated, revealing seamless integration of ripe fruit, dried herb and sweet oak spice. Our winemaker’s goal is to gently extract character and expression from the vineyards; to capture the best of what our land has to offer. The 2017 vintage delivered the power, concentration, complexity and nobility we expect from Cabernet Sauvignon.
